2 garlic leeks
2 garlic scallions
1 bunch arugula
3/4 lb Edison brothers bay shrimp
2 hard boiled eggs
.5 oz wasabi arugula
1/4 bunch purple mizuna
Cut greens off leeks and set aside. Cut stem of leek (the white and light green parts) into short rounds. Sauté in olive oil over medium heat for about five minutes, until rounds have some color. Add the leek greens, cut into small ribbons, with some salt. Cook on low heat, covered, for twenty minutes. Sprinkle with lemon.
Chop the scallions very fine and mix with a tablespoon of mayo, the bay shrimp, arugula, and a squeeze of lemon.
Toast the rolls.
When leeks are done, place leeks on the bottom roll. Top with shrimp salad, then garnish with wasabi arugula, mizuna, and egg.
